Strengere defaults für die config

Zahlung sind nicht änderbar nach dem Buchen.
Ferner die DATEV-Checks standardmässig einschalten
Kann auch gerne nochmal diskutiert werden, am Sinnvollsten wäre es die Konfiguration in die
Admin-Oberfläche zu verlagern
